8 med carrots (4 cups, sliced)

1 T butter or margarine

2 t lemon juice

1 t fresh ginger root, minced
instructions:

scrub the carrots well and slice into julienne strips. heat a skillet on med. heat, and add the butter. when the butter is melted, reduce the heat to low, and add the remaining ingredients.

cover the skillet, and sauté/steam about 25 minutes, stirring occasionally, until the carrots are tender. add a little bit of water if necessary to prevent sticking.
